Food as Medicine – Simplified (The Salad)

 Tonight I made salad from mostly “leftovers,” and living in Northern Minnesota with it still being cold in the month of May, I decided to make it warm!

 

I had some red quinoa; that’s the leftover, in the ‘fridge, I heated that up and planned to use it on top of my simple salad.

 

It was a ‘use it up’ kinda night!

 

I had a bag of romaine hearts and I used one of them and chopped them quickly and filled the bottom of two bowls.

Next, with the a small bowl of leftover spiral sliced (Vegetti) beets, I put half of what was left in each bowl. Split up the little bit of quinoa that was now heated up which is “electric” meaning, non-hybridized per Dr. Sebi, and next quickly chopped a leftover half of a yellow onion and divided it atop the two bowls along with bit of chopped celery (leaves and all – leaves ARE the medicine!); a tiny bag of raw pumpkin seeds that I also divided and put on top of the quinoa and onion, greens, and then used up the next-to-done Maple Balsamic dressing. I placed one small stalk of the celery on the side of the bowl slightly drizzled with the maple syrup balsamic vinaigrette and it was delicious!

 

Not only that, but I was using up some leftovers, it made the salad on a chilly day warm and much more appetizing like I was having a nice warm “dinner,” on a 45 degree drizzly day!

 

When I often speak of “Food as Medicine,” it is so easy to break it down this way:

 

Salad greens: chlorophyll
Onions: sulfur (think hair and nails!)
Raw pumpkin seeds: Vitamin E
Beets: blood purifier/cleanser
Celery: reduces inflammation big time!
Remember: Use the CELERY leaves!
And the maple was just extra delicious!

 

Making your food, your medicine is eating plant foods! You just cannot go wrong!

 

And, simple as pie, I put two washed yams into the oven on a cookie sheet at 350 degrees for about an hour and cooked them, cooled them on the top of the stove and peeled them and my dogs- ate them as quick as it gets! they love them! And, they are good for them, lots of vitamin A making their skin and fur just lovely! Try it for your canine companions and let me know in the comments.

 

This does not have to be complicated, and, you do not have to put “meat” on your food to get “Protein!”
Why? Because you will get plenty of protein and what’s crucial – lots of minerals, enzymes, vitamins by eating a good amount of your food raw!
